If I want a super sharp knife what the best plan?

It depends on the type of cutting you'll be doing. The majority of cutting tasks are slice cuts, which are also known as draw cuts, where you push into the material you're cutting while sliding the knife along it. For that type of cutting, you'll want a slightly toothy edge at a relatively narrow angle. Anything from 15-22 degrees will work well, especially paired with a 600-1500 grit finish. For tasks like carving, chopping and shaving, which are all push-cuts, you'll want a very polished bevel and will need either the lapping films, ceramic stones or leather strops. Very low angles are great for shaving, and push cutting veggies. For carving and chopping, you'll want it polished but a little wider 18-25 degrees.
